The VA358 White Eagle Leva combines modern technology with the traditional craftsmanship and skill associated in making the perfect espresso. The lever extraction system allows the barista to control the pre-infusion process manually for each delivery allowing each dose to be artfully pre-infused to achieve the correct extraction. By lowing the lever hot water enters the group, slowly wetting the coffee grounds. The more the barista lowers the lever, the longer the pre-infusion process, giving the barista total control. When the first drop of water appears then this is when a professional will know that the coffee has been properly permeated. For the best pre-infusion results, the water pressure should not exceed 2 bars when it enters the group.
Despite being a lever espresso machine, heat exchangers are used to enable the barista to control and optimise the quality of the espresso. A special pressure reducer is required to lower the bar pressure from 4-6 bar to the optimal level to produce a creamy espresso that is not burnt or bitter.
The Easycream option allows barista to turn espresso into milky coffee specialities. The innovative steam wand features tangential holes and a steam and air mixing system to create perfectly heated and frothed milk.
